What’s To Eat: Strawberries with Marsala Zabaglione

One of the blogs that I enjoy reading is Ken Rivard and Jody Adams’ The Garum Factory. One of their recent postings about Strawberries with Marsala Zabaglione caught my attention since (1) I have wanted to make and try a Zabaglione for a while, and (2) local Strawberries are so delicious (and available) right now. Although the recipe calls far Marsala, they point out that any high quality wine will do so I substituted some N.V. Alvear Pedro Ximenez Montilla-Moriles Solera 1927 that Felisha at Dave’s Fresh Pasta turned me on to (the “1927” is when the Solera process started, not the vintage). My rendition is not nearly as pretty as Ken and Jody’s, but it sure did taste good. You can see the recipe over at The Garum Factory. Here’s a review of a recent visit to Rialto.
