Cheese Plate: Ilha Graciosa

This cow’s milk cheese is from the Azores. Formaggio had a piece of this in their snack basket so I tried it. Very nice.

Their description says:

This cheese takes its name from the island in the Azores on which it is made. Ilha Graciosa is made using raw cow’s milk and is aged for at least nine months before we get our hands on it. This is a hard cheese encased in a thin yellow parafin rind. It has a moist yet crumbly texture with a big fruity flavor and a spicy and sharp finish.
